Pumpkin Spice Cake
Ingredients

Pumpkin Batter
4 large eggs, room temp
1 ⅓ cup of white sugar
1 cup of canola oil
2 cups of all purpose flour
1 tsp cinnamon
½ tsp ground cloves
½ tsp ground ginger
One 15 ounce-can of pumpkin puree
2 tsp baking powder
1 tsp baking soda
1 tsp salt

Cream Cheese Icing
6 oz cream cheese, softened
1 cup of powdered sugar
¼ cup of butter, softened
1 tsp vanilla extract
3 tbsp of milk or milk alternative
Directions
Preheat the oven to 350°.
In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. In a separate bowl, combine the flour, spices, baking powder, baking soda and salt. Gradually add dry ingredients to the pumpkin mixture and mix well.
Pour into an ungreased 15 x 10 x 1-in. baking pan. Bake at 350° for 25-30 minutes. Cool completely.
For icing, beat the cream cheese, powdered sugar, butter, vanilla, and milk in a small bowl. Mix until a smooth consistency is achieved. Chill icing in the fridge while the pumpkin spice cake cools.
Spread icing over bars. Cut by 6 x 4 to make 24 pieces total. Store in the refrigerator for up to three days or in freezer for up to 6 months.
